I used butter lettuce as the base tossed in extra virgin olive oil and fresh lime juice, topped with tenderloin steak, basmati cilantro lime rice, cherry tomatoes, avocado, banana pepper rings and red onion.
Added some extra lime juice on top, fresh chopped cilantro and seasoned with salt and pepper. It was an incredibly delicious and nourishing salad.

To make the cilantro lime rice, add two cups cooked brown or white rice to a bowl. Toss with fresh lime juice, fresh chopped cilantro and season with salt and pepper.
